Operational Test: Steam cooker should be operated for no less
than 15 minutes to verify that all controls, indicators, and

Leakage Test: During the operational test the steam, water and
drain connections shall be checked for leaks. Failure of the
piping, joints and fittings to be leakproof shall be cause for
rejection.

Timer Moister Seal Test: With the timer mounted in its normal
position on the cooker, steam should be impinged on all sides of
the timer or timer compartment for a period of 10 minutes.
Upon completion of the test, the timer shall be removed from the
cooker and disassembled. Any evidence of moisture inside the
timer should be cause for rejection of the moisture seal.
